Make this healthier blueberry ice cream at home – simple and refreshing!
Quick….whilst the sunshine is out for the bank holiday weekend, make this simple but refreshing blueberry ice cream!
This healthy ice cream is made from Greek yoghurt rather than sugar and milk. Make a batch and store it in the freezer for when you need an instant cool down.
Ingredients (enough to make 5 ice creams) Prep time less than 10 minutes Freezing time allow 3 hours

- 200g blueberries
- 500ml Greek Yoghurt
- 3 tbsp maple syrup
- 1 tsp vanilla extract
If you don’t have ice lolly moulds you could use 5 small freezable pots/plastic cups and 5 lolly sticks.
Put washed blueberries into a pan, pour in the maple syrup and vanilla extract, squash the blueberries with a spoon and bring it all to the boil, keep stirring. Allow the mixture to cool before stirring it into the Greek yoghurt, divide it into your moulds and place in the freezer. If you’re using pots or cups instead place the mixture in the freezer for 30 mins. Then give them a stir and return to the freezer for another 30 minutes. After that time push the sticks into the ice cream and return to the freezer for at least two hours.
Then enjoy! Perfect for cooling off in the sunshine or as a tasty treat anytime.
